  • 3.5 ounces fresh or frozen blueberries
  • 1.75 ounces granulated sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons lemon juice
  • 1.75 ounces confectioners’ sugar

Instructions

  1. Preheat your oven to 355°F and line two baking sheets with parchment paper.
  2. Unroll the puff pastry and lightly flatten it with a rolling pin.
  3. Cut out ghost shapes using a cookie cutter, rerolling scraps as needed.
  4. For half of the shapes, cut out eyes and mouths for decoration.
  5. Chill all cut shapes in the refrigerator for about 5 minutes.
  6. In a saucepan, mix blueberries, sugar, cornstarch, and lemon juice; cook until thickened.
  7. Spoon filling onto base shapes, brush edges with water, and top with decorated shapes.
  8. Crimp edges securely with a fork and brush tops with dairy-free milk.
  9. Bake for about 15-18 minutes until golden brown.
  10. Cool before drizzling with lemon glaze made from confectioners’ sugar and lemon juice.
