  • 2 tablespoons unsalted butter
  • 1 cup dark brown sugar
  • 2 room temperature eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • 1 cup coconut cream (as cream substitute)
  • 1 teaspoon kosher salt (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly butter an 11 x 8-inch casserole dish.
  2. In a bowl, mix chopped dates with baking soda. Scald milk in a saucepan, then pour over the dates and let cool for 15 minutes.
  3. Combine flour, baking powder, and salt in one bowl. In another bowl, beat eggs until fluffy. Blend eggs with dark brown sugar, butter, and vanilla in a food processor until mixed. Gradually add dry ingredients while blending on low speed. Stir in the soaked date mixture until smooth.
  4. Pour batter into the prepared dish and bake for about 30 minutes or until set.
  5. Meanwhile, make the caramel sauce by melting unsalted butter in a saucepan and stirring in brown sugar and salt until dissolved. Add coconut cream and simmer until thickened.
  6. Poke holes in the baked pudding and pour some caramel sauce over it to soak. Let rest for 15 minutes before serving.
