  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup oats
  • ½ cup cold butter, cubed
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. For the crust, combine 1 cup flour, ¼ cup sugar, and ¼ teaspoon salt in a bowl. Cut in ½ cup cold butter until crumbly. Press into the baking dish and bake for 10 minutes.
  3. For the filling, whisk together 1 can pumpkin puree, 1 cup sweetened condensed milk, 2 eggs, 1 teaspoon vanilla extract, cinnamon, nutmeg, ginger, and salt. Pour over the baked crust.
  4. For the crumble topping, mix together the remaining flour (1 cup), brown sugar (½ cup), oats (½ cup), and cinnamon (1 teaspoon). Cut in ½ cup cold butter until crumbly and sprinkle over the filling.
  5. Bake for 45-50 minutes until golden brown and set.
