  • 1/2 cup protein powder
  • 1/3 cup almond butter (drippy, unsweetened)
  • 34 Tbsp water
  • 8 pitted Medjool dates (128g)
  • 2 Tbsp coconut oil
  • 2 Tbsp protein powder
  • 1 cup dark chocolate chips
  • 1/2 Tbsp coconut oil

Instructions

  1. Line an 8" x 4" loaf pan with parchment paper.
  2. In a mixing bowl, blend protein powder, almond butter, and water until moldable; press into the loaf pan.
  3. Soak pitted dates in hot water for 5 minutes, then drain. Blend with coconut oil until smooth, adding protein powder until well combined.
  4. Spread the caramel mixture over the base in the loaf pan.
  5. Freeze for 2 hours until firm; cut into 8 pieces.
  6. Melt dark chocolate chips with coconut oil; dip each bar in chocolate and place on parchment-lined baking sheet.
  7. Drizzle remaining chocolate over bars if desired.
