  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 pinch red pepper flakes
  • 1 lb lean ground beef
  • 5 cups low sodium beef broth
  • 798 ml canned diced tomatoes (28 oz) 1 large can
  • 1 1/2 cups whole wheat macaroni pasta, uncooked
  • 1 cup tomato sauce

Instructions

  1. Heat 1 tablespoon of canola oil in a large pot over medium-high heat. Add 3 finely chopped carrots, 1 chopped onion, and 1 chopped celery rib; sauté for 3–4 minutes until softened.
  2. Stir in 2 teaspoons Italian seasoning, 1 teaspoon minced garlic, 1 teaspoon salt, 1/4 teaspoon paprika, black pepper, and red pepper flakes; cook for an additional minute.
  3. Add 1 lb lean ground beef and cook until browned for about 2–3 minutes.
  4. Pour in 5 cups low sodium beef broth and 798 ml canned diced tomatoes; bring to a boil. Cover and cook for 5–10 minutes until carrots are tender.
  5. Stir in 1.5 cups uncooked whole wheat macaroni pasta and 1 cup tomato sauce; cover and cook until pasta is al dente (about 7–8 minutes). Serve hot.
