  • 1 leg quarter (bone-in, skin-on)
  • 1 tsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 1 clove garlic, minced
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • 1 garlic clove, minced
  • 1 cup baby carrots
  • 1 tsp olive oil
  • 1 tsp honey or maple syrup
  • Pinch of salt & black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Rub the chicken leg quarter with olive oil, herbs, minced garlic, salt, and pepper. Place on a baking sheet and roast for 35–40 minutes until golden brown.
  2. Toss baby carrots with olive oil, honey (or maple syrup), salt, and pepper in a bowl. Spread on a separate baking sheet and roast alongside the chicken for about 25–30 minutes until tender.
  3. In a skillet over medium heat, add olive oil and minced garlic. Sauté trimmed green beans for 6–8 minutes until bright and slightly blistered.
  4. Serve the roasted chicken hot with the glazed carrots and sautéed green beans.
