Ingredients
Scale
2 cups mixed greens or lettuce
1 large chicken breast, grilled and sliced
1 cup corn (fresh, canned, or frozen)
1 cup cherry tomatoes, halved
1/2 cucumber, thinly sliced
1/2 cup guacamole
1 tbsp olive oil
1/2 tsp paprika
1/2 tsp garlic powder
Salt and black pepper to taste
Pinch of red chili flakes (optional, for garnish)
Instructions
Begin by seasoning your chicken breast. Rub it with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.
Preheat your grill or grill pan over medium heat. Place the seasoned chicken on the grill. Cook for about 6-7 minutes on each side or until fully cooked and golden brown.
While your chicken is grilling, prep your vegetables: halve the cherry tomatoes, thinly slice the cucumber, and if using frozen corn, heat it according to package instructions.
Once everything is ready, layer mixed greens at the bottom of a serving bowl. Add sliced grilled chicken on top of the greens. Layer in cherry tomatoes, corn, cucumber slices, and a generous scoop of guacamole.
Sprinkle red chili flakes over the top if desired. Enjoy your colorful Grilled Chicken Power Bowl with Guac & Veggies immediately for the best flavor!
