  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 2 Large eggs (room temperature)
  • 1 Egg yolk (room temperature)
  • 1 tsp Pure vanilla extract
  • 2 3/4 cups All-purpose flour
  • 3/4 cup Unsweetened cocoa powder
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Salt
  • 2 cups Oreo crumbs (blend into a fine crumb. Keep the filling)
  • 3.4 oz Chocolate instant pudding
  • 2/3 cup Milk
  • 1 1/2 cups Heavy cream
  • 2/3 cup Powdered sugar
  • 1/8 cup Unsweetened cocoa powder
  • 1 tsp Pure vanilla extract
  • 1/2 cup Heavy cream
  • 1 TBSP Powdered sugar
  • 1 tsp Pure vanilla extract
  • Chocolate curls (optional for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the melted butter, brown sugar, and white granulated sugar. Mix until well blended.
  3. Add in the eggs and egg yolk one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture until fully combined.
  7. Fold in the Oreo crumbs gently.
  8. Line your baking sheet with parchment paper.
  9. Scoop large portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 13 minutes or until set around the edges but still soft in the center.
  11. Allow cookies to cool on a wire rack completely.
  12. In a separate bowl, whisk together chocolate pudding mix and milk until thickened.
  13. In another bowl, beat heavy cream with powdered sugar until soft peaks form. Add cocoa powder and vanilla extract; continue whipping until stiff peaks form.
  14. Take one cookie and spread a layer of chocolate pudding mousse on top.
  15. Pipe or spoon whipped cream over the mousse layer.
  16. Top with additional cookie if desired or serve open-faced with chocolate curls for decoration.
