Scale
  • 2 pints fresh cherry tomatoes
  • 23 cloves minced garlic
  • 8 ounces spaghetti
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup hand-torn fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon fine sea salt

Instructions

  1. Boil salted water in a large pot. Cook spaghetti according to package instructions. Reserve 1/2 cup pasta water before draining.

  3. Gently mash tomatoes with the back of a spoon to release juices. Simmer for an additional 5 minutes.
  4. Combine cooked spaghetti with the sauce in the skillet, adding basil and Parmesan cheese. Adjust consistency with reserved pasta water if needed.
