  • 3 pounds bone-in, skin-on chicken thighs
  • 1 packet ranch seasoning mix
  • 1 packet onion soup mix
  • 1 cup chicken broth
  • 1/2 cup creamy ranch dressing
  • 1/4 cup melted butter
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 can diced tomatoes with green chilies (10 ounces)
  • 1 can cream of mushroom soup (15 ounces)

Instructions

  1. Pat chicken thighs dry with paper towels.
  2. In a large bowl, whisk together ranch seasoning mix, onion soup mix, garlic powder, paprika, black pepper, thyme, and cayenne pepper (if using).
  3. Add melted butter and olive oil to the seasoning mixture; toss until chicken is coated evenly.
  4. Chop onion, carrots, and celery into uniform pieces.
  5. Spray slow cooker with cooking spray.
  6. Layer chicken in the bottom of the slow cooker; add vegetables on top.
  7. Pour undrained diced tomatoes over vegetables.
  8. Combine chicken broth and creamy ranch dressing; pour over everything followed by cream of mushroom soup.
  9. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken reaches an internal temperature of at least 165°F (74°C).
  10. Shred the chicken and return it to the sauce before serving.
