  • 2 tbsp vegetable oil
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chili flakes (optional)
  • 13.5 oz can coconut milk
  • 1/2 cup beef broth
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • Fresh herbs (cilantro or mint)

Instructions

  1. Thinly slice the beef, onion, and garlic; grate the ginger.
  2. In a large skillet over medium-high heat, add vegetable oil and brown the sliced beef for about 4-5 minutes. Remove and set aside.
  3. In the same skillet, sauté onions until softened (3-4 minutes), then add garlic and ginger, cooking until fragrant (1 minute).
  4. Stir in red curry paste, cumin, turmeric, and chili flakes; cook for 2 minutes.
  5. Pour in coconut milk and beef broth; bring to a gentle simmer.
  6. Return the beef to the skillet, add soy sauce and brown sugar, simmering for another 5-7 minutes.
