  • 12 oz egg noodles
  • 1 lb lean ground beef (or turkey/chicken)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (6 oz) tomato paste
  • 1 cup sour cream (or plain Greek yogurt)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 9×13-inch baking dish.
  2. Cook egg noodles in salted water until al dente, then drain.
  3. In a skillet, brown the ground beef over medium-high heat, draining excess fat.
  4. Stir in diced tomatoes, tomato paste, garlic powder, onion powder, salt, and pepper; simmer for 5-7 minutes until thickened.
  5. Mix one cup of cheddar cheese with the sour cream in a bowl.
  6. Layer half of the noodles in the baking dish, followed by half of the meat sauce, then the sour cream mixture. Repeat the layers.
  7. Top with mozzarella and remaining cheddar and Parmesan cheese.
  8. Cover with foil and bake for 30 minutes; remove foil and bake an additional 10 minutes until cheese is melted.
