  • 12 oz egg noodles
  • 1 lb lean ground beef (or turkey/chicken)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (6 oz) tomato paste
  • 1 cup sour cream (or plain Greek yogurt)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 9×13-inch baking dish.
  2. Cook the egg noodles in salted water until just al dente; drain and set aside.
  3. In a large skillet over medium-high heat, brown the ground beef until fully cooked; drain excess fat.
  4. Stir in diced tomatoes, tomato paste, garlic powder, onion powder, salt, and pepper; simmer for 5–7 minutes until thickened.
  5. In a bowl, combine sour cream with 1 cup of cheddar cheese.
  6. Layer half of the cooked noodles in the baking dish followed by half of the meat sauce and all of the sour cream mixture. Repeat with remaining noodles and meat sauce.
  7. Top with mozzarella cheese and reserved cheddar and Parmesan.
  8. Cover with foil and bake for 30 minutes; remove foil and bake for another 10 minutes until golden brown.
  9. Let rest for 10 minutes before slicing into portions.
