  • 1 bay leaf
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp butter
  • 2.5 cups all-purpose flour (for crust)
  • 1 tsp salt (for crust)
  • 1 cup cold unsalted butter, cut into cubes
  • 1/2 cup ice water
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sear seasoned beef chuck in olive oil until browned; remove from pot.
  3. Sauté onion and garlic until soft, then add mushrooms until browned.
  4. Stir in flour and tomato paste; cook briefly.
  5. Deglaze with vinegar (if using); add beef broth and herbs.
  6. Return seared beef to pot; simmer for 2–3 hours until tender.
  7. Prepare the crust by mixing flour with cold butter until crumbly; add ice water gradually.
  8. Roll out dough; line pie dish with half, fill with cooled beef mixture, cover with remaining dough, vent top.
  9. Bake for 45–55 minutes until golden brown.
