  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons brown sugar (light or dark, packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted, for coating)
  • ¼ cup sugar (for coating)
  • ½ teaspoon cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and reduce apple cider in a saucepan until it measures 1/4 cup; cool.
  2. In a bowl, sift flour, baking powder, baking soda, salt, and spices together.
  3. In a separate bowl, beat 6 tablespoons of unsalted butter and granulated sugar with brown sugar until creamy. Mix in eggs, vanilla, apple cider, and apple butter.
  4. Combine wet and dry ingredients until just mixed.
  5. Scoop dough onto lined baking sheets and bake for 11-13 minutes until cookies spring back when lightly touched.
