  • 1 lb ground chicken
  • 1 egg
  • 1/2 of a Granny Smith apple, peeled and diced
  • 1/2 of a yellow onion, diced
  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 2 oz cheddar cheese, freshly grated
  • 1/2 cup fine breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 1-inch piece of ginger, grated
  • 1 tsp soy sauce
  • 1 tsp salt
  • Freshly cracked black pepper and cayenne to taste
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1/2 tsp each: cinnamon, coriander, cumin, and nutmeg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake sweet potatoes until tender (60-75 minutes).
  3. In a sauté pan, heat olive oil and cook onions and apples until softened. Remove from heat to cool.
  4. In a bowl, combine ground chicken, egg, breadcrumbs, cheese, parsley, walnuts, ginger, salt, pepper, cayenne powder, and cooled onion/apple mixture.
  5. Form mixture into 2-inch meatballs and place on a greased baking sheet; bake for 15 minutes.
  6. Peel baked sweet potatoes; mash with butter, maple syrup, spices, salt, and cayenne.
